Dear Greg,

Clyde s Retaurant stopped serving bottled beers to cut down the weight of its garbage in 1991 eliminating 16-17,000 bottles per month. Serves only draft. (Located in Vienna, VA)
Clement Street Bar Grill, San Francisco: The glass containers are collected twice a week by a garbage hauler who supplies collection receptacles for them (out of doors) and sends us a check every couple of months. It s not much, but it beats paying them to take it away. IIn other words, set up a contract with a private hauler to do this and write your own terms.
Kegged hard liquors are served at Able s (Binghamton, NY) eliminating tons of glass per year (1994).
