One of the best Green Hotels programs which includes recycling programs is:

Another is a project of the 5 Lakes Development Corporation with assistance from the Cornell University Cooperative Extension. It is a waste management program for tourism industry firms including hotels and motels. The Corporation is in Watkins Glen , NY at 607-535-7072.
Another very good manual is: Waste Reduction in Hotels and Motels: A guide for hotel and motel managers put out by Georgia Hospitality Environmental Partnership (404-371-2405) in 3/96.
There is also a magazine called GreenHotelier put out by American Express Travel Related Services, that is worth a look.
