Dear Dawn Manago,

The products on the market for counteracting or reacting twith organics to mask them include:

Bra-Vo, which contains an extract of Yucca schidigera plant which is rich in the chemical Sarsaponin. Any other chemical with Sarsaponin would do too.
EcoCare made by Nature Plus
Epoleon, an odor neutralizer, though I don't know who makes it.
There are also biofilters, natural combinations of substances which can be used. See the article, Innovative biofilter controls Odors, by Parviz Amirhor, et. al., in the 9/97 issue of BIOCYCLE MAGAZINE.

These are just some of the possibilities. I'd contact the Composting Council directly for technical assistance.
